Ingredients

  • 8 ounces spaghetti

  • 2 cups diced tomatoes

  • 1 cup chicken broth

  • 1 cup sliced mushrooms

  • 0.5 cup diced onions

  • 2 cloves garlic, minced

  • 1 tablespoon olive oil

  • 1 teaspoon Italian seasoning

  • 0.5 teaspoon salt

  • 0.25 teaspoon black pepper

  • 0.5 cup grated Parmesan cheese

Directions

  • Heat the olive oil in a large pot over medium heat, then add the diced onions and garlic and sauté until soft.
  • Add the diced tomatoes, chicken broth, mushrooms, Italian seasoning, salt, and black pepper to the pot and stir well.
  • Add the spaghetti to the pot, ensuring it is submerged in the liquid, and bring to a boil.
  • Reduce the heat to low, cover the pot, and let the spaghetti cook for about 10 minutes, stirring occasionally.
  • Once the pasta is cooked and the liquid is mostly absorbed, remove the pot from the heat.
  • Stir in the grated Parmesan cheese until melted and evenly distributed throughout the pasta.
  • Let the pasta sit for a few minutes before serving to allow the flavors to meld together.
