Ingredients

  • 1.5 cups graham cracker crumbs

  • 0.25 cup sugar

  • 0.5 cup unsalted butter

  • 1 pound cream cheese

  • 1 cup heavy whipping cream

  • 0.75 cup powdered sugar

  • 1 teaspoon vanilla extract

  • 1 tablespoon lemon juice

Directions

  • In a medium bowl, combine graham cracker crumbs and sugar. Melt the butter separately, then stir it into the crumb mixture until evenly combined.
  • Press the crumb mixture firmly into the bottom of an 8-inch springform pan. Use the back of a spoon to pack it tightly and create an even layer.
  • In a large mixing bowl, beat cream cheese until smooth and creamy. Gradually add the heavy whipping cream, powdered sugar, vanilla extract, and lemon juice. Beat until combined and fluffy.
  • Pour the cream cheese mixture over the crust in the springform pan. Smooth the top with a spatula, ensuring an even layer and flat surface.
  • Cover the cheesecake with plastic wrap or aluminum foil and refrigerate for at least 4-6 hours, or until fully set. This allows the flavors to meld and the cheesecake to firm up.
