Ingredients

  • 1 cup couscous

  • 1.5 cups water

  • 0.5 cup cherry tomatoes

  • 1 cup cucumber

  • 0.25 cup red onion

  • 0.25 cup olives

  • 0.5 cup feta cheese

  • 2 tbsp extra virgin olive oil

  • 2 tbsp lemon juice

  • 1 tsp oregano

  • to taste salt and pepper

Directions

  • Bring the water to a boil in a small pot. Once boiling, add the couscous, cover, and remove from heat. Allow it to sit for 5-10 minutes until fully absorbed.
  • While the couscous is absorbing, chop the cherry tomatoes, cucumber, and red onion into small pieces. Slice the olives as desired.
  • Fluff the couscous with a fork. Then, combine it with the chopped vegetables and olives in a large bowl.
  • Add the feta cheese to the couscous and vegetable mixture, gently mixing to combine all ingredients.
  • In a small bowl, whisk together the olive oil, lemon juice, oregano, salt, and pepper. Pour the dressing over the couscous mixture and stir thoroughly.
