2 cups cooked, shredded chicken
1 cup cooked brown rice
1/2 cup black beans (rinsed)
1/2 cup diced carrots
2 tbsp chopped fresh parsley
1 tbsp olive oil or lime juice (optional)

Directions
- Boil or bake 2 boneless, skinless chicken breasts. Once cooked, shred using two forks.
- Cook brown rice according to package instructions. While rice cooks, rinse black beans and dice carrots.
- In a large mixing bowl, combine chicken, rice, black beans, carrots, and parsley. Add olive oil or lime juice if desired for extra moisture and flavor.
- Divide mixture evenly into 4–6 airtight containers or freezer-safe meal-prep bowls. Let cool completely.
- Label each container with the date. Freeze for up to 2 months.
- Boil or bake 2 boneless, skinless chicken breasts. Once cooked, shred using two forks.
