  • 2 cups cooked, shredded chicken

  • 1 cup cooked brown rice

  • 1/2 cup black beans (rinsed)

  • 1/2 cup diced carrots

  • 2 tbsp chopped fresh parsley

  • 1 tbsp olive oil or lime juice (optional)

  • Salt to taste (optional)

Directions

  • Boil or bake 2 boneless, skinless chicken breasts. Once cooked, shred using two forks.
  • Cook brown rice according to package instructions. While rice cooks, rinse black beans and dice carrots.
  • In a large mixing bowl, combine chicken, rice, black beans, carrots, and parsley. Add olive oil or lime juice if desired for extra moisture and flavor.
  • Divide mixture evenly into 4–6 airtight containers or freezer-safe meal-prep bowls. Let cool completely.
  • Label each container with the date. Freeze for up to 2 months.
